The ultimate comfort dish, this tasty and creamy soup will delight your palate with the delicate and subtly earthy flavor of mushrooms and herbs. Use plant-based milk (we recommend rice milk) for a vegan dish or milk and cream for a more traditional vegetarian version.

Makes 5 cups!

Preparation: Pour everything into a saucepan, then add 3 cups (750 mL) of water and 1 tbsp (15 mL) of butter or margarine. Mix well. Bring to a boil, then cover and simmer over low heat for 25 minutes. Add 250 ml of milk and 250 ml of cream (or 500 ml of vegetable milk), then heat for another 5 minutes.
