Organic Honey Non-pasteurized
Harvested in mid-August
Never pasteurized, classic honey is cold extracted, filtered and liquefied at low temperature in order to preserve the aromas and properties of the honey while benefiting from its liquid texture.
The texture of classic honey depends on an entirely natural phenomenon: crystallization. At the time of packaging, all honeys are liquid. With time, crystals develop which modify their texture. In order to give it back its liquid texture, classic honey is lightly heated at low temperature, but never pasteurized. It will therefore crystallize in a more or less near future, crystallization being a natural phenomenon in all unpasteurized honeys.
Most importantly, don't think that the crystallized honey is spoiled! With a little stirring, it can be blended with other ingredients very well. In order to liquefy the honey, it has to be gently heated in a water bath. It is important never to heat honey in a microwave oven. Caution! The water in the pan should not boil, but rather simmer slightly.
This honey finds its aromatic richness from a simultaneous flowering of goldenrod flowers with sweet notes and buckwheat flowers with more full-bodied, slightly caramelized aromas.
Dominant Flowers : goldenrod, buckwheat
Secondary Flowers : aster, eupatorium
*The colour, taste and texture of honey can vary from one harvest year to another. The photo is for illustration purposes only.
